Tasting plate. Three different flavors come together on one plate for our Italian themed plated desserts. On the left is coffee toffee gelato with toffee crumbles and chocolate garnish. The middle is moscato sabayon with blueberry sauce and garnished with fresh fruit and tuile cookie. The right is a classic canoli garnished in chocolate.

Advanced Breads

Our final project was to create two sandwiches and actually make them for other students to try. My group made a chicken parmesan sandwich on a focaccia load and a BLT with arugula, mustard, on a pretzel bun!

Entremet and Petite Gateaux

Entremet is a french word literally meaning "between servings". But for our purposes it is a mousse based dessert with multiple layers, similar to cake. Petite gateaux is also french meaning "little cakes" and is just a smaller sized entremet. Here are my designs from class.

Super Mom


 I participated in a cupcake competition at my school, the theme was mother's day. My team won first place, here are our creations. The wonder woman tiara topper cupcakes contain chocolate cupcakes filled with peanut butter ganache and topped with chocolate fudge icing. The super mom hearts are on top of a praline buttercream and vanilla cupcake filled with toasted almonds and caramel sauce. The last cupcake is a lemon poppy seed cake filled with passion fruit curd and marscapone cream cheese frosting topping.
